This is a popular Thai dessert called khao niaow ma muang, made with glutinous rice and sweet coconut milk, served with fresh sweet mango and drizzle with coconut sauce. My daughter loves it!
NOTE: Make sweetened coconut milk while the rice is steaming. Once the rice it cooked it must be immediately transferred to a bowl, then cover the rice with sweet coconut milk sauce.
INGREDIENTS
For sweet sticky rice
3 cup Cooked sticky rice
1 cup Coconut Milk
3/4 cup+2 tablespoons sugar
1/4 teaspoon salt
2-3 mangoes, peeled and sliced
toasted sesame seeds (optional)
For coconut cream sauce topping
1 cup coconut milk
1 1/2 teaspoon rice flour
1/3 teaspoon
DIRECTIONS
In a big bowl mix together coconut milk, sugar and salt until dissolved.
Transfer hot steam sticky rice in a coconut milk. (link for sticky rice recipe above).
Stir to incorporate thoroughly, then cover with clean towel or sheet cloth and let the rice sit for about 30 minutes.
TO MAKE COCONUT CREAM SAUCE (to be drizzled over top):
In a small sauce pan, stir coconut milk, rice flour and salt, mix well.
Transfer over low heat, whisk constantly to prevent lumps.
Simmer, until the sauce thickens. Remove from the heat.
Serve sticky rice with mango slices, drizzle some coconut sauce on top and sprinkle with sesame seeds.
