Pad See Ew, Thai Stir Fried Noodle(ผัดซีอิ๊ว)

Pad See Ew is a Thai stir-fried wide rice noodle with black soy sauce. Stir fry quickly on hight heat in a wok. It's a popular Thai street food that you can easily find from lots of street vendors in Thailand.


NOTES:

-Best to use fresh rice noodles that can be purchased at most Asian grocery stores.

-When using fresh rice noodles make sure to peel off each noodle before stir-frying.

-If using dried, soak the noodles with hot tap water for about 15-20 minutes, Then drain them and set aside.

-Recommend making 1 serving at a time, it's easier to work with the noodles that way.

 

INGREDIENTS (Serves 1)


10 oz. Fresh Wide Rice Noodle

4 oz. Meat of Your Choice, slice

5 oz. Chinese Broccoli, cut into 2 inch long

1 Egg

2 Cloves Garlic, chopped

2 tbsp. Black Soy Sauce

1 1/2 tbsp. Light Soy Sauce

1 tbsp. Oyster Sauce

1/2 tbsp. Sugar

1/2 tbsp. Vinegar


DIRECTIONS

  1. Heat wok over high heat, add oil and garlic and stir-fry about 5 seconds.

  2. Add meat and sear until the meat is almost done. Stir frequently.

  3. Add noodles and black soy sauce, light soy sauce, oyster sauce, vinegar and sugar. Toss and cook for about a minute.

  4. Add broccoli and stir quickly.

  5. Push the noodle up on one side of the wok and add a splash of oil in the wok, then crack in an egg.

  6. Scramble the egg and let it cook for 30 seconds.

  7. Fold noodle over the egg, and give it a quick stir.

  8. Then let it set in a wok for another 30 seconds to give the noodle slightly caramelized charred flavor.

  9. Turn off the heat and transfer to the plate.
