Fried Banana - it's one of my favorite snacks! I remember when I was young there was an old lady selling them on the street close to my house. Every time I walked by I got to have it. It was the best fried Banana I ever had! The combination of shredded coconut and sesame seed that make it so crunchy and yummy!
NOTE:
-If using regular banana, peel bananas and cut in half lengthwise then cut it in half crosswise. You should have 4 pieces for one banana.
INGREDIENTS
5-6 Thai Bananas "not too ripe”
1/2 c. Unsweetened Coconut Flakes
1/8 c. Raw Sesame Seed
1/4 c. Sugar
1/4 c. Coconut Milk
1/4 c. Water
1/2 c. Rice Flour
1/2 tsp. Baking powder
1/2 tsp. Salt
Lots of oil for deep fried "I use coconut oil or Sunflower oil"
DIRECTIONS
1. Combined flour, sugar, baking powder and salt in a mixing bowl.
2. Then add coconut milk and water and mix till smooth.
3. Add shredded coconut and sesame seed stir in till all ingredients are combined.
4. Preheat your oil in a deep frying pot over medium high heat till it reach 365 degrees F.
5. Peel bananas and cut equally in 3 pieces lengthwise (into 3 long pieces).
6. Dip banana in the batter and coat well. Fry in hot oil for about 5 minutes until batter is puffy and golden brown. Drain excess oil on paper towels when done.
Sometime at Thai restaurants they serve it with coconut ice cream or with honey, but normally you just eat it as is - like I did when the old lady made them for me!
