Spicy thai basil chicken (Pad Ka Prao)ผัดกะเพรา

Spicy Thai holy basil chicken is one of the most popular Thai stir-fried dishes. Serve over steam rice and sometimes top with a fried egg.


Thai holy basil is difficult to find in the US. So in this recipe I use Thai sweet basil instead, and you can find it in most grocery stores.

Note: Thai holy basil is bold and intensely hot. When eaten raw, holy basil has a slight numbing effect on the tongue. When added to cooking it tends to get even spicier as it is.


INGREDIENTS


1 lb. Ground chicken, or any kind of meat you prefer

Handful of Basil

5 cloves Garlic

8-10 Thai Chillies, or less if you want less spicy

2 tbsp. Oyster Sauce

1 tbsp. Dark Soy Sauce

1 tbsp. Sugar

1 tbsp. Fish Sauce

1/2 c. Chicken Stock or water

4 tbsp. Oil


DIRECTIONS


1. Crush garlic and chilies in mortar with a pestle. (or finely chopped with knife)


2. Heat oil in a wok over high heat and fry chillies and garlic for about 10 seconds or until fragrant. Add chicken and continue to stir-fry for a minute or so.


3. Add fish sauce, oyster sauce, dark soy sauce, sugar and stock. Stir and cook till the chicken is done.


4. Add basil and stir quickly, then turn off the heat.


Serve over rice and top with fried egg.
