Gai Tod Had Yai, it's crispy and lightly coated with batter with lots of spice.
INGREDIENTS
2 lbs Chicken Wings
1 1/2 tbsp Coriander Seeds
2 tsp Cumin Seeds
8 Cloves Garlic
1 tbsp Black Peppercorn
1 tbsp Cilantro Root or Stem, chooped
3 tbsp Oyster Sauce
3 tbsp Light Soy Sauce
1/2 tsp Salt
2 tbsp Raw Sugar
1/2 c. All Purpose Flour
1/4 tsp Baking Soda
1/4 c. water
DIRECTIONS
Pound coriander seeds, pepper and cumin seeds in a stone mortar with pestle. Add garlic and cilantro root, continue pounding till become rough paste.
In a big bowl mix together the paste, light soy sauce, oyster sauce, salt, and sugar.
Add chicken and stir well till the chicken cover with marinate sauce. Cover and marinated overnight or at least 3-4 hours in the refrigerator.
Before frying, add flour, baking soda and water into marinated chicken and mix well.
Heat oil over medium heat until hot. Carefully add in the chicken, and fry until golden brown.
Place the chicken on a paper towel lined plate to absorb the excess oil.
Served with sticky rice.
