This is real Thai street food, you will find a food cart grilling this on the curbside of streets all over the city - and you can smell the bbq from blocks away. Every time I go back to Thailand this is my almost every morning breakfast. The sweetness and the aroma of coconut milk is so delightful.
INGREDIENTS
1 1/2 lb. Pork tenderloin, Slice pieces lengthwise into 1"– 2"-wide strips.
5 cloves Garlic
1/2 tsp. Pepper
1/4 cup. Coconut Milk
1 tbsp. Cilantro Root, chopped
3 tbsp. Coconut Sugar
2 tbsp. Oyster Sauce
2 tbsp. Light Soy Sauce
2 tbsp. Black Dark Soy Sauce
2 tbsp. Vegetable Oil
Coconut Milk for brushing
DIRECTIONS
In mortar and pestle, pound pepper, garlic and cilantro root until it becomes fine paste.
Mix sugar, oyster sauce, soy sauce, coconut milk, salt, oil and the paste. Mix well till sugar is dissolved.
Add in pork and marinade in fridge overnight or at least 3 hours.
Soak wood skewers in water for 30 minutes, Thread couple pieces of marinated pork onto skewers.
Place the skewers on the grill rack directly over the fire. Cook, turning the skewers occasionally, and brushing the skewers with coconut milk while they cook keeps them moist.
Cook about 2-3 minutes each side, until the pork is cooked and charred at the edges but still juicy.
Serve with sticky rice.
