Corn Fritters

Crunchy Yummy Corn Fritters... you just can't stop eating!



INGREDIENTS


2 cup corn kernels, cut from 2 large cobs

4 kaffir lime leaves, mince

1 Thai red chili, chopped, (optional)

1/2 cup all purpose flour

1/2 cup cold water

1/4 teaspoon ground pepper

1/4 teaspoon salt


DIRECTIONS


In a bowl, mix together flour, salt, ground pepper and water. Mix well until the batter is smooth.


Add corn, chili and kaffir lime leaves. Stir until well combined.


Heat oil in a frying pan over medium high heat.

Once the oil is hot, scoop about 2 tablespoon of the batter into the pan. Spreading it lightly into a flat, circular shape.


Cook the fritters for 2 to 3 minutes, then flip them over and continue to cook until fritters turn golden on each side.


Remove from the pan and plate the fritters line with paper towels to absorb the excess oil.


Serve with Thai sweet chili sauce.
